Paginate with `WHERE (sort_key, id) < (last_key, last_id)` rather than OFFSET.
Why interviewers ask about it
O(log n) at any depth and stable under concurrent inserts. OFFSET 100000 scans and discards 100,000 rows and drifts between pages.
